The Weekend Baker :: Cinnamon apple pull-apart bread

Inspired by an image on Pinterest, I scoured several recipes came up with my own adaptation. Instead of small chunks of apples I used thin slices, apple-pie thin slices. This recipe turned out well - really well. Next time we'll make some adaptations... I encourage you all to have fun with add-ins... add some raisins or dried cranberries or walnut pieces. They'd be wonderful. This was our trial run and so we kept it simple. While not at all hard to make, this recipe is time-consuming. You'll need an hour to let the dough rise and an hour + in the oven. I've tried my best to simplify this.

Ingredients:

For the filling you will need:
2 apples, peeled, cored and thinly sliced
1/2 cup of packed brown sugar
1 Tbs of pumpkin pie spice, or ground cinnamon
2 Tbs of butter, melted
If desired add in 1/2 cup of chopped walnuts or raisins or both

For the dough:
3 cups of bread flour
1 packet OR 2 1/4 tsp rapid rise yeast
4 tbs softened butter
1/2 tsp salt
1/4 cup sugar
1/3 cup warm milk
1/4 cup plus 2 Tbs warm water
2 eggs
2 tsp vanilla

Directions:

In a bowl add four, salt, sugar and yeast, mix well and set aside. 
In a mixing bowl add eggs, vanilla, and butter and beat well, then add milk and water, mix again. When well blended, in 1/2 to 1 cup increments, add the flour mixture to the liquid until a dough is formed. If too dry and crumbly add water, 1 tbs at a time. If too wet add small amounts of flour. Dough should be soft but not wet.

Remove dough and knead a few times, then place in a lightly greased bowl, cover with a cotton cloth or towel and set aside to rise an hour. Dough should rise, to nearly double in size. If it doesn't you should still be alright. 

At this point you can start with the apple mixture, Cut apples and set aside. Don't worry about a little browning - all will be covered in cinnamon and sugar anyhow!

In a small bowl add 2 tbs of melted butter, the cinnamon and the brown sugar. Mix well. Set aside. 

Preheat oven to 350 degrees.
On a metal cookie sheet roll out your dough so that the entire surface is covered. When the dough is rolled out, with a spatula spread the sugar mixture evenly over the entire surface of the dough. Then add the apples. It's ok if they overlap. When the apples have been placed, cut the dough into 6 equal strips from top to bottom (not length-wise) 

Lightly grease a loaf pan. (Cooking spray is fine.) Pile each dough strip, one at time, on top of the other,  into the loaf pan. The pile may be taller than the loaf pan. This is perfectly acceptable. Now cut the dough again into 5 or 6 strips, across the top of the pan - not length-wise. this is what makes the bread pull-able. Press down on loaf pan if necessary. 

Place in oven for about 60 minutes, but check for doneness after 50 minutes. 
When done remove from from oven and let cool for at least 10 minutes. Use a spatula or knife to separate the bread from the pan - the melted sugar gets sticky! Place onto a platter, large serving plate or cutting board. Add some powdered sugar and start pulling!
